Well, Yonder at Queenstown has delivered the goods with their Blueberry and Lemon Pancakes (pictured). The creation of Head Chefs Harry Payne and Merika Connal, you NEED to try these vegan buckwheat pancakes layered with blueberry compote, vegan lemon curd, vegan orange and mint compound butter, freeze dried blueberries, coconut labne, lime crumb, mint, poppy seeds and maple syrup. Buckwheat is a fantastic gluten free option because it is a seed not a grain and has a high nutritional content. Nice choice team Yonder!
