Warm bread, fresh from the oven? Can’t beat it. I’ve been baking bread of all sorts for at least 20 years. Since I don’t eat gluten for health reasons, I’ve experimented with a gluten-free version that doesn’t involve lots of binders and fillers. Job done. Using an unusual bread ingredient that creates a yeasty tasting, flavoursome and moist bread.
A lot of gluten free breads either contain a whole bunch of junk to make them edible or they are really dense. Neither reminds me of doughy rolls fresh from the oven. On a whim, I decided to try Kombucha in the recipe. It worked! Even the kids liked it. And they are pretty anti-homemade bread.
I created the following recipe that takes 5 minutes to mix, 15 mins to cook and 1 minute to eat!
Kombucha Buckwheat Bread
3/4 cup to 1 cup of Kombucha (my favourite is Daily Organics Winter with Chai Spices)
1.5 cups of Buckwheat flour
Pinch of natural salt
Mix all ingredients in a bowl. Start with just 3/4 cup of Kombucha and see how gooey the mixture is. It should be a dough consistency so add a bit more water if needed.
Let the mix rest for a few minutes.
To make rolls, use a tablespoon to put spoonfuls of the mixture on a baking tray (about the size of a dinner roll). Bake in a medium oven (around 175 degrees Celsius) for 15 minutes or until golden brown on the outside and cooked through on the inside.
My kids like to eat this bread with vegan butter. I find it enjoyable without any spreads or maybe some homemade raspberry chia jam (raspberries and chia seeds blended).
